Tomato Makhana Soup

Start by sautéing chopped onions, garlic, and butter in a pan until they turn soft and translucent. Add in chopped tomatoes with a pinch of salt and pepper, cooking until the tomatoes become mushy. Let the mixture cool, then blend it into a smooth paste. In the meantime, roast bowlful of makhanas in ghee until they’re crunchy, and blend half of them into a powder. Mix the paste and makhana powder back in the pan, add some water to adjust the consistency, and bring it to a boil. Stir in some cream and finish by garnishing with the remaining roasted makhanas and fresh coriander.

Savoury Overnight Oats:

Savoury Overnight Oats

Savoury overnight oats is one of the most loved superfood recipes with an Indian twist. In a jar, combine 2 spoonful oats, 1 tablespoon chia seeds, and a spoonful of curd. Pour in enough milk to fill the jar, then stir everything together. Cover the jar and refrigerate it overnight. The next day, grate some cucumber and carrot, and mix them into the soaked oats. For the tempering, heat oil in a small pan, then add mustard seeds, curry leaves, slit green chilies, and cashew nuts (if using), sautéing until fragrant. Pour the aromatic tempering over the oats mixture, stir well, and serve your little one a refreshing and flavourful dish!

Start by boiling sweet potatoes until tender, then cut them into bite-sized chunks. In a mixing bowl, combine the sweet potatoes with crunchy sprouts, finely chopped onion, tomatoes, and a handful of fresh coriander. Season the mixture with salt, pepper, and a squeeze of lime juice to taste, mixing everything together until well combined. For a final touch, garnish with a sprinkle of pomegranate seed and a handful of sev, creating a vibrant and flavourful dish that’s as beautiful as it is delicious.

To this, add ½ cup of ragi flour and 1 cup of whole wheat flour, followed by a pinch of salt, ½ teaspoon of baking powder, and ¼ teaspoon of baking soda. Gradually add milk to achieve a pancake-like batter consistency. Heat a non-stick pan over medium heat and lightly brush it with oil. Pour a ladle full of the batter into the center of the pan, cover, and cook until bubbles form on the surface. Flip the pancake and cook until golden brown on the other side. Once done, transfer the pancake to a plate and top it with sliced bananas and a drizzle of honey or maple syrup. Serve warm and enjoy!
